Salmon Ceviche on Avocado and Mango Salad



Super simple and easy to prep in advance and looks kinda fancy.

This starter is light, refreshing and looks like a whole lot more effort has gone into it

The salmon can be made well in advance, just remember to drain, the avocado needs to be made up to 30 mins prior otherwise it will spoil. As for the parmesan crisps, these can be made days in advance as long as kept in air tight container (and are a lovely little snack too) 


Ingredients: (serves 4)


200g fresh (or thawed) salmon fillet, skinned, bones removed and cut into 1/2cm dice

2-3 limes, juiced

1 tsp. lime zest

1/2 finely chopped red onion

2 Tbs. chopped fresh coriander

Salt

2 small radishes, very thinly sliced into half-moons

2 large ripe avocado, cut into 1/2cm dice

1 medium ripe mango, cut into 1/2cm dice

1 Tbs. rice vinegar (or apple cider vinegar)

Parmesan cheese


Method:

For the Salmon:

In a flat based container, combine:
Salmon
Lime juice
Lime zest
1 third of the red onion
Coriander
Good pinch of salt

Stir, cover and refrigerate up to 30 mins. Stir at least once in the middle (if making in advance, drain after 30 mins)
The lime juice should cover at least half way up the salmon.



For the Avodaco and Mango Salad:

In a bowl, combine:

Remaining red onion
Avocado
Radish
Mango
Small pinch of salt
Vinegar

Stir and cover for up to 20-30 mins maximum



For the Parmesan Crisps:

Grate a handful of parmesan cheese (on small grater if you have one)
Make small mounds spaced out on greaseproof paper lined baking tray
Gently push each mound flat
Circles should be a little smaller than the average mug
Place under medium grill
Keep an eye on them, you want to take them out when they are bubbling and the edges are just turning brown.
Leave on side to completely cool then transfer to air tight container, these will last for ages.

Serving:
Either using one of those metal circles or an improvised one (I cut about 3 fingers worth off the top off an old pot noodle pot)
Place avocado half way and gently push down
Top with salmon and gently push down
GENTLY lift circle away
Place parmesan crisps on top
